Afeeg

Afeeg is a processed dairy product that was produced in Sinai Peninsula fbr at least 200-500 years. It is made flom goat milk. When the rains are good and the goat milk plentiful, this is made with the buttermilk that remains after chuming the milk to make butter. Thus, Afeeg is sour, earthy and has a buttermilk flavor.

What makes Afeeg unique is that it is made of goat milk, which is quite unusual in Egypt. In addition, Afeeg is unique because goats feed on different pasture. In terms of production scale, Afeeg is home-produced "small scale production". This processed product depends on the rain because when the rains are good and the goat milk plentiful, this is made with the buttermilk that remains after churning the milk to make butter and its production know-how is transmitted from one generation to another.
