Freek El dora

Freek El dora has been produced in Daqahlia and Gharbiya for at least a few generations. It is made of corn, which is roasted to give it a smoky flavour, and is then dried. It can be stored on or off the cob. After making it, it can be used in different dishes, such as Spinach, kofta, and animal stuffing recipes such as the Fereek and liver stuffing of pigeons.

Fereek is sold dried on the cob in local village markets. Fereek is consumed in Eid Adha “the sacrifice festival of Muslims” because it is used to make the rice kofta.
